When I browse a host...is a request sent directly to the host for an up-to-date list of the files shared?...or
Is the request sent to the ultra peer that has previously indexed the list of files when the host first connected to Gnuttela thus possibly providing an outdated list of files shared?

It is directly sent to the host.
The UP would only have a keyword hashed byte array and not a indexed file list of the host.

keyword hashed byte array can be translated as: The ultrapeer doesn't know the names of the files, but it can check, if a keyword you send it can possibly be found at one of its leafs. It's a (far) more complex version of "check if the number of letters is the same".
