Yes it is possible, use manual updating of your iPod; see http://www.apple.com/support/ipod/tu...tarted_t3.html
It would also be worth looking through the entire iPod tutorials.

When you manually update, just drag & drop the items to the iPod. You did add the video to iTunes 1st right? That's what you need to do before adding to the iPod. You should find the video file in the main iTunes library. If not, look under the video playlist. And to delete from iPod, select & clear.

ok so by dragging to the ipod, you mean like highlighting the song and taking the file, and putting it hovering over the ipod thing that says anna maries ipod and dropping it and then it will go on my ipod? is that how i get songs from my library to my ipod? well i went through and unchecked all the songs i dont want but i have no idea what to do next...

Press the learn more button arrow in the link I gave above.
Quote: In manual mode, you can delete songs from your iPod without deleting them from iTunes. Make sure your iPod is selected in the Source menu, and then choose the song you wish to delete in the main window. Press the Delete key on your keyboard and the song will be removed from the iPod. To delete multiple songs at once hold down the Command key on the Mac (or Shift key on your PC), select the songs, album, artist, or entire genres you want to delete, and then press Delete.
